Dry greens last a week.<\/p>\n<h2>2. Plan one big-cook night<\/h2>\n<p>Roast a tray of root vegetables, saut\u00e9 a pan of greens, and you have the base for lunches all week.<\/p>\n<h2>3. Stem-to-leaf<\/h2>\n<p>Beet greens, radish tops, broccoli stems \u2014 all edible, all delicious. Treat them like spinach.<\/p>\n<h2>4. Freeze the surplus<\/h2>\n<p>Blanched greens, sliced peppers, and pestos all freeze well in flat freezer bags.<\/p>\n<h2>5. Talk to your farmer<\/h2>\n<p>Got a vegetable you do not recognise?
