Biscuits are forgiving, but the best ones come from cold butter, real buttermilk, and a light hand.
You will need
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 6 tbsp cold butter, cubed
- 3/4 cup buttermilk
- 2 tbsp cream, for brushing
Method
Whisk dry ingredients. Cut in butter until pea-sized. Stir in buttermilk just until shaggy. Turn out, fold three times, pat to 1-inch thick, cut, and bake at 425°F for 12–14 minutes. Brush tops with cream the moment they come out of the oven.
